Our birch glazed salmon showcases the finest salmon fillets, marinated in a combination of Finnish birch syrup, Swedish mustard, and apple cider vinegar. Baked in the oven to seal in the Nordic flavours and torched to give a smoky finish.

Our cauliflower salad is a harmonious blend of finely sliced raw cauliflower, crunchy hazelnuts, and sweet blueberries in a herbed lemon honey dressing, while our saffron-spiced hasselback potatoes tossed in bread crumbs with quail eggs, asparagus and broad beans offer a blend of east and west in the flavour profile. The dressing is made from a homemade mayonnaise lightened with sour cream whilst the asparagus, broad beans and pea shoots brings the burst of fresh spring green. The final salad of strawberry and cucumber with chunks of salty feta cheese dressed in elderflower and white balsamic vinegar adds a sweet and juicy finish to the meal.
