Swedish semla is a much-loved February treat, traditionally eaten on and around Shrove Tuesday. This beautiful cream bun is also enjoyed across the Nordic and Baltic regions, including Finland (laskiaispulla), Norway (fastelavnsbolle), and Estonia (vastlakukkel).

The cardamom-spiced wheat bun is proved and baked, then left to cool before the top is cut off. In Sweden, the traditional method is to scoop out some of the soft interior, mix it with milk and almond paste, and use this to refill the bun. The filling is then topped with whipped cream, the cut-off top is placed back on as a jaunty lid, and the bun is finished with a dusting of powdered sugar.

In other Nordic countries, particularly Finland, the almond paste is often replaced with strawberry or raspberry jam.

In recent years, semla fillings have become increasingly creative, with new variations appearing each year. This year, Fazer bakery in Finland topped the traditional jam-and-cream version with kiwi-flavoured popping bubbles. We’ve used flavour pearls in our savoury dishes for some time and were intrigued to see how they might work in a sweet bun. We’ve tried them and love the result, but appreciate they may not be to everyone’s taste — so we offer options both with and without them.

This year, we are offering:

  • Finest Danish marzipan, made into a smooth paste and topped with vanilla whipped cream and a scattering of chocolate-coated, salted caramelised almonds.
    With or without caramel popping bubbles.

  • Homemade raspberry jam, topped with vanilla whipped cream.
    With or without raspberry popping bubbles.

  • Homemade blueberry jam, topped with vanilla whipped cream and fresh mint.
    With or without peach popping bubbles.

  • Prinsesstårta-inspired semla — homemade raspberry jam topped with vanilla custard whipped cream, finished with a lid of green Danish marzipan and a sugar rose.

A portion includes four buns of your choice — either four of the same type or a mixed selection. Please use the drop-down menu to choose.
